56 oz San Marzano tomatoes

2 Tb tomato paste

2 Tb olive oil

1 tsp anchovy paste

4 garlic cloves, minced

½ tsp sea salt
- 2 Tb Italian seasoning

½ tsp freshly ground black pepper

2 Bay leaves
Method

Warm the olive oil in a heavy saucepan over medium-low heat.

Add the minced garlic and sauté gently until fragrant. Do not brown.

Stir in the bay leaves and Italian seasoning and allow them to infuse briefly.

Crush the tomatoes by hand or with a spoon and add them to the pot.

Stir in the tomato paste and anchovy paste until fully incorporated.

Season with salt and pepper.

Simmer on low heat for at least 30 minutes, stirring occasionally.

Remove the bay leaves before serving.
To Serve
Serve with gnocchi, pasta, or polenta. Finish with freshly chopped Italian parsley or basil and a drizzle of good olive oil.
